What you need

bunch fresh mint

slice prosciutto

tbsp olive oil

bunch fresh parsley

clove garlic clove

flank steak
lemon

onion

red bell pepper
slice provolone

bunch fresh chives

tbsp dry seasoning rub
Instructions
1. Season flank steak with olive oil and dry rub. 2. Chop parsley, mint, chives, bell pepper and onion. 3. Mince garlic. 4. Grate lemon zest. 5. Combine chopped herbs, minced garlic, lemon zest and pickled red onions in a bowl. 6. Spread herb mixture over seasoned flank steak. 7. Top with provolone and prosciutto. 8. Tightly roll flank steak and tie with kitchen twine. 9. Cut roll into equal slices and thread onto skewers. 10. Grill over medium-high heat until desired doneness. 11. Serve immediately.
