A delightful recipe for tanghulu, a candy fruit treat. Combining sugar and water, heat until it reaches an amber color for perfect coating. Ideal for creating a crunchy and sweet exterior on your favorite fruits.
In a cold pan, combine 2 parts sugar with 1 part water.
Turn heat to High and allow it to simmer until it reaches an amber golden brown color.
To test if it is ready, coat one end of a stick and dip into ice water; if it instantly hardens, then it's ready.
Put the desired food onto a stick and coat with the sugar mixture.
Either dip in ice water for it to immediately harden, or set on a plate and allow it to cool (recommended).
DO NOT STIR THE SUGAR MIXTURE WHILE HEATING! It will cause crystallization which will ruin the product.
